This volume presents to the world tastes provided by the recipes collected and recorded by the Tourism Organization of Dodecanese with the help of the Municipalities and Communes of the Dodecanese, of other bodies, and of so many housewives of the islands, who have so readily shared with us the secrets of their art. This is an art which has been influenced, as is only natural, both by the proximity of the islands to the East and by the cultural influence of the Western conquerors of these islands.
